L’Auberge de l’Ill-Hotel des Berges

In the small alsatian village of Illhaeusern, the Haeberlin-Baumann let you discover their unique family history. Alongside the Michelin star restaurant Auberge of Ill, Hotel des Berges invite you to an epicurian experience on the Banks of the Ill river. 

Their History starts 150 years ago, at this time Henriette & Martha were cooking a delicious traditional cuisine as simple as tasty. In 1952, the Haeberlin brothers, Paul & Jean-Pierre transform this place into a gastronomic temple. In 1967, they received the ultimate recognition in being awarded by their 3rd Michelin star.

In 1992, the Haeberlin-Baumann decides to start a new adventure and opens their 5 star hotel.

The spa is really a small gem – it is very intimate,  a very japanese feel in the decoration & atmosphere. We enjoyed the outer pool and the quiet river banks. Needless to say we have booked ourselves for another stay !

This hotel is associated with the Auberge de l’Ill. The rooms are intelligently designed, the beds are very comfortable, and the view over the river guarantees quiet nights. Great place to refresh and relax

Wonderful property — on the river, lovely gardens and a great spa area with pools, sauna/steam, hot tub, and cold pool. After a long day of biking, I got refreshed in the steam, cold pool, sauna, cold pool routine — then enjoyed an elegant yet simple meal at the adjacent Auberge de l’lll. Marco Baumann, Hotel Manager

He started his career as a chef. At the end of the 70s, he was a chef in Los Angeles and only wanted to return to France on one condition: that he could work next to Paul Haebelin. This is how he met his future wife, Danielle, . In 1992 he created Hôtel des Berges in the park of Auberge de l’Ill and added five stars to the skies of Illhaeusern.

“The Hôtel des Berges is inspired by the architecture of the Ried tobacco driers. Inside is the soul of a large bourgeois hotel where everyone can feel at home. At the entrance there is no obvious reception desk. I wanted to rediscover authenticity mixed with the real pleasure of family tradition.”

Edouard Baumann, Marketing Manager

A Graduate of the Ecole de Management de Lyon, he then had various diverse and enriching experiences. From a Parisian start-up to a French multinational in Shanghai, his path has been marked by very educational experiences allowing him to discover very different universes. He then honed his talents as a marketing manager in automotive retail for Citroen, Volkswagen and Audi.
